Crown Cake

An old Swedish classic that is naturally gluten-free. Tastes best lukewarm with our cloudberry jam and lightly whipped cream.

Ingredients

  • 2 eggs
  • 100 g soft butter
  • 1½ dl sugar or other preferred sweetener
  • 1½ dl (approx. 70 g) almonds
  • 1 dl almond flour
  • 3 bitter almonds or 3 drops of bitter almond essence
  • 2 medium-sized pre-cooked potatoes

Preheat the oven to 175 degrees Celsius. The batter is most easily and conveniently made in a food processor. First, process the almonds until finely ground. Then add eggs, soft butter, and sugar – process until white and fluffy.

Add the remaining ingredients and process thoroughly into a smooth and lump-free batter.

Pour the batter into a greased pan. Bake for about 30 minutes.
