Hjortronkaka

Cloudberry Cake

This is a classic cake from our region. Anna Tora Hedéen ran Hedegårds guesthouse just north of Torfolk Gård. She was known for her homemade food, and this recipe is taken from her cookbook.


Ingredients

  • 2 dl wheat flour
  • 2 large eggs
  • 150 g butter
  • 2½ dl powdered sugar
  • ½ teaspoon vanilla sugar
  • 1 teaspoon baking powder
  • grated zest of one lemon
  • 320 g cloudberry jam

Cream the butter and half of the sugar. Add the vanilla sugar and grated lemon zest and mix until light and fluffy.

Whisk the egg yolks and the rest of the sugar and fold into the butter mixture.

Whip the egg whites until stiff. Fold in the flour and baking powder alternately with the whipped egg whites. Spread the batter in a round, well-greased pan and top with the cloudberry jam.

Bake for 35 minutes at 175 degrees Celsius. Once the cake has cooled, sift powdered sugar over it.

Serve with whipped cream.
